Wow what a week.

Has anyone ever had a string of  plain crazy days?  Well, this week was mine.  Work was a nightmare, the kids have been running circles around me and it took me going to 3 different stores to get all of the things needed to make the recipe this weekend. Not to mention, I dropped my new candy thermometer on the kitchen tile floor just minutes after buying it. 1 hour of picking up glass shards later, and I was too tired to bake.

As for this weeks sweet treat, I made "Freedom Fudge"  in honor of my amazing husband.  He is by far the most wonderful person I have ever met. He is defending the freedoms that we all take for granted. He is such a person that he doesn't even break a sweat doing it.  I sleep better at night knowing that there are brave, strong & selfless people in the world protecting the things that we hold dear.

YAY!!

The first recipe in the challenge went off without a hitch.   I created a great recipe for “Love at First Flight Cookies”.  They turned out even better than I thought they would.  Thick, moist and amazing!  When everything is going crazy, you can always count on chocolate, butter and coconut to make everything okay again.
I have decided that at the end of the year, I am going to write a cookbook for mail-able recipes. I will include fun ways to package your baked good, and find the best and worst ways to get them to APO addresses.
Please let me know if you have any questions about baking or candy making, I will do my best to cook a little bit of everything throughout the month.

THE CHALLENGE

For all of you that know me, you probably know that I am a horrible goal setter.  I usually choose things that I am already good a,t or stuff that is already coming down the pipeline.  Now here is another one..... Starting this weekend I am challenging myself to bake original "mailable" desserts once a week that will be sent to Chris in Afganistan.

This may sound crazy to some, but to others this is just another one of Jess's hairbrained ideas and another halfass goal ( I tend to be a good baker, so the only lofty part is the time line)  I plan on baking the new creation on saturday, which gives me all week to think of the new recipe.

THE RULES...
1)  All recipes will have to be easily shipped ( Chris will let me know the condition of the goodies when they arrive).
2) All desserts need to be 75% original recipes ( If Chris does not respond with the conditon of the goodies, it is because I somehow killed him with my cooking... oops)
3) All desserts MUST be appealing to the eye and just as yummy.
4) All packages MUST go out on Monday.

I have 48 weeks until chris gets home, and 48 recipes to create....
Please feel free to help, this might turn into a group effort!
